I impulsively bought some avocado oil, but it was so pricy ($10 for 12 ounces), that I can’t bring myself to use it. It seems too precious to waste on deep-frying or even sautéing, and I don’t want to dump ounces of it into marinades. But the Internet is smarter than me, and here’s what I found you can do with it:
- Use it as a finishing oil or in vinaigrettes. Or you can mix it with greek yogurt and spices for a delicious dressing. Bonus points if you add cilantro, which totally sings when paired with avocado oil
- Try it in ceviches; seafood and avocado oils are a match made in heaven.
- Drizzle it on vegetables when oven-roasting
- Make mayonnaise out of it
I personally have used avocado oil to caramelize onions for a Mexican dish and found the onions had a much richer flavor.
